Old-Fashioned Banana Pudding
Ingredients:
- 3 ripe bananas
- 3 eggs
- 2 tablespoons cornstarch
- 1 dash salt
- 1 cup sugar
- 1/2 teaspoon vanilla extract
- 2 cups milk
- 1 tablespoon bourbon (optional)
- Vanilla wafers
- Whipped cream (for serving)
Instructions:
Step 1: Prepare the Pudding Base
- Separate Eggs: Separate the egg yolks from the whites, placing the yolks into a mixing bowl. Set the egg whites aside for later use.
- Combine Ingredients: In the mixing bowl with the egg yolks, whisk together the cornstarch, salt, and sugar until well combined.
- Heat Milk: In a saucepan, heat the milk over medium heat until it begins to simmer.
- Temper Eggs: Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Return to Heat: Pour the tempered egg mixture back into the saucepan and return it to the stove.
- Cook Pudding: Cook the mixture over medium heat, stirring constantly, until it thickens to a pudding-like consistency, about 5-7 minutes.
- Add Flavorings: Remove the pudding from the heat and stir in the vanilla extract and bourbon, if using. Let the pudding cool slightly.
Step 2: Assemble the Banana Pudding
- Layer Ingredients: In a serving dish or trifle bowl, layer the vanilla wafers, sliced bananas, and pudding, repeating the layers until all ingredients are used, with pudding as the top layer.
- Chill: Cover the banana pudding with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the pudding to set.
Step 3: Serve and Enjoy
- Garnish: Just before serving, garnish the banana pudding with a dollop of whipped cream and additional vanilla wafers, if desired.
- Serve: Scoop out portions of the chilled banana pudding and enjoy the creamy, comforting goodness!
